Get Acquainted with the New Facility Director at The Ranch Fitness Center & Spa
David Gibas was raised in south Florida playing numerous high school and youth sports. This love of sports and competition directed his career to study Exercise and Sports Sciences at the University of Florida. David also obtained a Master’s Degree in Health Administration from the University of Florida. While attending the University of Florida, David completed a 1,600 hour internship at Munroe Regional Medical Center’s LifeTime Center Cardiac Rehab program in Ocala, Florida. He was subsequently hired by the hospital where he remained for 6 ½ years. David’s experience at Munroe includes personal training, cardiac rehabilitation and fitness specialist and facility director. In 2002, Compass Health & Fitness recruited David to manage the day to day operations as President of their health club. After leaving Compass and being out of the fitness industry for a number of years, David starting missing the business where he spent over 15 years of his life. His desire to get back to the fitness industry lead him to his new position as Facility Director at The Ranch Fitness Center & Spa.

February will be the busiest month ever for Master the Possibilities Education Center. Every weekday and several evenings will have a variety of classes and presentations taught by an exceptional faculty. In fact, four visiting scholars from the Northeast will enhance our faculty. The Titanium Chef Challenge at the Farmer’s Market
On March 4th, three of On Top of the World’s most talented chefs will meet at the Farmer’s Market to compete for the first ever Titanium Chef Crown! The chefs will be greeted by three mirrored stations that will include a warmer burner, a flame burner, a grill and all the necessary tools for their challenge. On Top of the World’s Executive Chef Dave Bland will prepare three mystery baskets with selected ingredients such as: dried rice, pasta, fish, shrimp, chicken, fresh herbs, heavy cream, butter, white wine, salt and pepper. The three contenders will be allowed to search for ingredients and produce throughout the market to use for the competition. They will have a one hour time limit to create a dish that will be tasted by Chef Dave and judged to decide who will become the month’s top Titanium Chef. Each chef will prepare small tastes of their creations for patrons to sample. The first Titanium Chef Challengers are Chef Greg Beal, Chef Elvia Castillo and Chef Derek Equatore.

The Town Square
The Circle Square Commons Town Square is the home of a weekly Farmer’s Market offering a wide and appealing array of fresh produce, seasonal as well as year-round, from local and regional growers. Fresh produce is just one of the many items you can find! The Farmer’s Market has new items every week including flowers, plants, fresh baked goods, hand-made soaps, delicious pies and much more. Plus, the Market features local crafters and artists displaying creative and unique pieces from charming denim purses and beautiful oil paintings to wood working creations and framed photography.
The Farmer’s Market also holds the "Flavors of the Season" cooking demonstrations by On Top of the World chefs every week. The chefs use farm-fresh produce available at the Market, along with other ingredients, to create mouth-watering meals such as Chicken Pot Pie, Steak Jack Daniels, Old Florida Clam Chowder and Penne Amitriciana. These demonstrations are held from 10:00 to 10:30 a.m. every week. After the demonstration, patrons are invited to sample the finished dishes and pick up a recipe card to try at home.

Celebrate St. Patrick’s Day at the Circle Square Commons Town Square on Wednesday, March 17, 2010 from 4 – 9 pm. Enjoy Irish music, live Irish dance and entertainment, an authentic Irish meal, domestic and imported beer, and crafters for traditional St. Patrick’s Day festivities.

Bring your dancing shoes and enjoy entertainment every Friday and Saturday night on The Town Square (weather permitting). March will feature performances by local artists like Automatic, Fred Campbell, Crossfire Band and Karen Hall.

February at Circle Square Cultural Center showcases a diverse offering of talent. The Kingston Trio will be charming you on February 19th with many of their hits such as Tom Dooley, MTA and Honey – remember their clean-cut stage appearance from the old 33 vinyl album covers! And on February 27th, Jim Stafford will perform Critters & Snakes and many more. Do you recall his early performances with a little known singer at the time – Dolly Parton? He helped launch her career in those days. He is a talent with many hits and still delights audiences with his music and entertaining personality.
